75 ml Oatmilk

Cremige Champignon-Kichererbsen-Pfanne

1. Blend the cashews, oatmilk, lemon juice, nutritional yeast to a smooth cashew sauce in a blender. Season to taste with salt and pepper.

2. Bring water with a pinch of salt to the boil in a pot and add the rice. Once the water boils, turn off the heat and keep the lid closed for 20 minutes.

3, Dice the onion and garlic and finely slice the mushrooms. Heat some olive oil in a frying pan, add the onion and garlic and fry for 5 minutes over a medium heat. Add the mushrooms and stir-fry for another 5 minutes.

4. Add the chickpeas and cashew sauce and simmer for about 7 minutes, stirring occasionally. If desired, add a little water for a more liquid consistency.

5. Serve with the rice and enjoy!

Storage

This dish can be stored in the fridge for up to three days in an airtight container. If you find that the dish has thickened up in the fridge, simply add a splash of water to revive it and bring back its creamy consistency. We recommend heating it up on the stove or in the microwave.

Fun fact

Cashews are one of the most popular types of nuts. But contrary to what you might think, you can't just pick the nuts from the tree and eat them. This is because the tender cashew nuts are coated in a shell that contains the poisonous oil cardol. If the oil comes into contact with mucous membranes, it causes severe burns. Cashew nuts are only edible when roasted.
