200 ml water
1 teaspoons Vegetable stock

Eintopf-Kürbis-Pasta

1. Peel and chop the onion and the garlic, cut the pumpkin into cubes.

2. Sauté onion, garlic and pumpkin in a saucepan with a little oil. Add rosemary and cayenne pepper. Cook for about 2 minutes.

3. Add the pasta from your jar and deglaze with stock. Cover and simmer on medium heat for 10 minutes.

4. In the meantime, roast the pine nuts or the cedar kernels from your jar in a pan without oil until golden. Set aside.

5. When the pasta is almost al dente, stir in the oatmilk.
Once the pasta is al dente, season with salt and pepper sprinkle with nutritional yeast and roasted pine nuts / cedar kernels on top and enjoy!

Storage

The One Pot Pumpkin Pasta can be stored in the fridge for up to 3 days. If you find the pasta to be a bit dry after refrigeration, simply add a splash of water or plant-based milk while reheating to revive the creaminess of the sauce.

Fun fact

Winter pumpkins are a great for storing in the winter months: Whole, undamaged winter pumpkins, last between two and seven months, depending on the variety.
