Oven baked potatoes with creamy mushroom sauce are a tasty and easy-to-prepare dish. The potatoes are baked in the oven until crispy and then served with a creamy mushroom sauce flavoured with fresh herbs. All ingredients are seasonal and sourced from Switzerland, including the dry ingredients, which come in reusable jars. Although the dish is vegan, we deliberately refrain from labelling it as such, as it is simply incredibly delicious.

Ofenkartoffeln mit cremiger Pilzsauce

1. Baking potatoes: Preheat the oven to 240°C (220°C fan). Melt 1 tablespoon of oil/butter in a medium-sized pan. Halve the potatoes lengthwise and place them on a baking sheet lined with parchment paper. Drizzle the melted butter / oil over them. Season the potatoes with salt and pepper and bake for 25 minutes in the oven until they are tender and slightly crispy. Turn the potatoes halfway through cooking time. Do not wipe out the pan.

2. Cutting vegetables: Quarter the mushrooms if necessary and clean them. Peel the garlic and dice it finely. Cut the leek into pieces.

3. Frying vegetables: Fry half of the garlic in the pan with 1 tablespoon of oil over medium heat for about 1 minute until soft. Add the leek and mushrooms with 1 tablespoon of balsamic vinegar, a pinch of salt, and pepper in the pan and increase the heat to medium-high. Fry it for 6-8 minutes.

5. Simmering sauce: Stir in flour into the mushrooms. Add water, milk, and half of the broth seasoning to the mushrooms while stirring constantly over medium heat. Bring the sauce to a simmer and let it thicken slightly for 3-5 minutes. Season the sauce with salt and pepper and keep it covered and warm until serving.

6. Salad: peel the carrots and slice thin. Wash the lambs lettuce. Mix the remaining garlic with 1 tablespoon of balsamic vinegar, a pinch of salt, and pepper and mix all the salad together.

7. Serving: Pour the mushroom sauce over the baked potatoes. Serve the baked potatoes with the lambs lettuce and its dressing.

This dish can be easily stored in the refrigerator and will last for about 2-3 days. To refresh the dish, simply add a little water and reheat it. This will make the sauce creamy again and keep the potatoes juicy.
