Eintopf-Kidneybohnen-Chili

1. Cut the onion, carrot and garlic into cubes. Heat olive oil in a saucepan over medium heat. Fry the onion and garlic for about 4 minutes, adding the diced carrot after 2 minutes. Season with salt and pepper.

2. Add the paprika, cumin, chili powder, passata, quinoa and 200 ml water. Drain the kidney beans and add them as well. Salt, pepper and stir well. Put the lid on and simmer on low heat for about 20 minutes. Stir occasionally and add a little water if necessary.

3. After 20 minutes, check that the quinoa is al dente. If necessary, simmer for another 3-5 minutes. Add the almond paste and season with salt and pepper.

4. Drizzle with some fresh lemon juice and enjoy!
