Pasta mit Blumenkohl

1. Wash and cut the cauliflower into florets. Wash the
cauliflower leaves.
2. In a blender, combine cashews, lemon juice, oat milk,
nutritional yeast, salt, and pepper and blend until
smooth.
3. Bring water to a boil in a pot, add salt, and add the
pasta. 2 minutes before the end of the cooking time,
add the cauliflower florets to the pasta cooking water.
Drain the pasta, reserving 100ml of the cooking water.
4. Return the pasta, cauliflower, and cashew sauce to the
pot with the reserved cooking water. Stir well and
season with salt and pepper.
5. Heat some olive oil in a frying pan and sauté the
cauliflower leaves. Season generously with salt and
pepper. Serve the pasta and cauliflower leaves
immediately and enjoy!

Leftovers? Pasta can be kept in the fridge for 3-4 days. Reheat for at least 2 minutes at around 70°C.

Cauliflower leaves are a little-known delicacy - they have a wonderful aromatic flavor and even contain more vitamins and minerals than cauliflower florets!
